Carrot soup with ginger and orange

Ingredients

4 tablespoons olive oil
1.5 kilos carrots, peeled and chopped
50 grams ginger, peeled and chopped
200 grams yellow onion, chopped
1 litre orange juice
1 litre water
3 tablespoons coriander powder
2 tablespoons white pepper
salt to taste
400 ml plain yogurt

Directions

Heat the oil in large pot. Add carrots, ginger and onion and cook a few minutes until starting to soften. Add spices, juice and water and cook until vegetables are tender. Let cool slightly and then blend until smooth. Add yogurt and salt to taste. Garnish with plain yogurt, chives & paprika. Enjoy!
