Nourishing Rainbow Buddha Bowls

Buddha bowls are a wonderful way to enjoy a healthy, delicious meal that is vibrant, colourful and loaded with various different ingredients to for nourishment and sustenance. Typically, a buddha bowl is a mix of fresh and cooked vegetables, some form of healthy protein like legumes, tempeh or salmon, and then healthy fats, such as avocado, nuts or seeds.

One of the best things about these bowls (aside from how pretty they are!) is that they are generally fast to throw together, and all the elements can also be prepped in advance, making it easy to make a quick healthy meal, or transport with you to work during the week.

Nourishing Rainbow Buddha Bowls

Ingredients:

Maple-Roasted Chickpeas:

  • 1 can chickpeas
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 2 tsp maple syrup
  • 1/4 tsp cayenne pepper

Bowl:

  • 1 medium sweet potato, cut into small cubes
  • 2 cups quinoa, cooked
  • 1 avocado, sliced
  • 1/2 cup purple cabbage, shredded
  • 1 cup kale, shredded

Dressing:

  • 1 garlic clove
  • 2 tbsp lemon juice
  • 1/4 cup tahini
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 2–4 tbsp water

Instructions:

Preheat your oven and line 2 baking pans with parchment paper.

Pat the chickpeas with paper towel until they are mostly dry then toss them with the olive oil, salt, cinnamon, maple syrup and cayenne pepper. Place on a baking pan and bake for 30-35 minutes until golden brown and crispy.

Place the sweet potatoes on a separate pan and bake for 20-30 minutes along with the chickpeas until tender.

To prepare the dressing, blend all ingredients together until smooth and creamy.

To assemble your bowl, place quinoa on the bottom, and top with shredded cabbage, kale, quinoa, sliced avocado, sweet potato, and chickpeas. Top with the tahini dressing.
