If you have joined us on our Bali yoga retreat, you will be familiar with some of the amazing flavours and ingredients of Asia. Guests on retreat love to experience all of these fresh and fragrant tastes, and also make our popular Sambal recipe with our head chef.
This recipe is for a popular coconut soup that is enjoyed cool. It is very quick and easy to make and brimming with both flavour and nutrients. One spoonful is sure to take you to tropical lands!
(Makes 2 serves)
- 1 tin of coconut milk
- 2 tablespoons of soy sauce
- 2 limes juiced
- 3 slices ginger
- ¼ teaspoon of chili
- ½ teaspoon garlic
- 6 large Thai basil leaves
- 1 teaspoon of honey
- 10 cherry tomatoes
- 1 daikon chopped
- 1 capsicum chopped
- Coriander and basil to garnish
Blend all of the top ingredients in your blender until smooth.
Pour the liquid into two bowls and then evenly distribute the chopped vegetables on top of both bowls.
Garnish with coriander and Thai basil leaves.
