Nothing beats a good platter, especially around the holiday season! Platters are easy to make and wildly diverse, meaning you can get creative and use whatever you like to build your platter. This post is more of a source of inspiration for you with suggestions and a couple of favourite dip recipes. 

Build your plates with:

  • Various dips and cheese
  • Crackers and/or artisan bread
  • Fresh vegetable crudités – carrot, cucumber, celery, capsicum or snow peas are perfect
  • Freshly cut fruit- grapes, melon and berries are terrific
  • Olives or marinated vegetables such as capsicum, sun-dried tomatoes, artichoke hearts or an antipasto mix
  • Raw or roasted nuts and seeds
  • Dried fruits such as figs or dates
  • For more hearty options you could add falafels, prawns, mini savoury tarts, rice paper rolls, filled mushrooms or mini sliders or sandwiches

Here are two delicious unique dip recipes that are perfect to go on your vibrant platter!

Avocado & Lime Thai Dip

  • 1 whole fresh coconut, flesh and water
  • 1 large ripe avocado
  • 4 kafir lime leaves
  • 2 garlic cloves
  • 1 cup of cashews, soaked for 2-4 hours
  • 2 teaspoons salt
  • ½ cup lime juice
  • ¼ cup coconut oil
  • ½ cup baby spinach leaves

Method:

Drain and rinse the cashews well.

Place all the liquids at the bottom of your blender then cashews on top.

Blend all ingredients until completely smooth and creamy.

This dip will keep in a sealed jar in the fridge for 2-3 days.

Beetroot & Mint Dip

  • 2 cups grated beetroot
  • 2 cups of cashews, soaked for 2-4 hours
  • ½ cup coconut water
  • 1 cup mint leaves
  • 1 teaspoon cumin
  • 2 teaspoons salt
  • 1 teaspoon garlic
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice

Method:

Drain and rinse the cashews well.
