Vietnamese Superfood Salad Recipe


Vietnamese Superfood Salad

Serves 3 – 4

This is not only beautiful looking but delicious. It’s a firm favourite on our Bali Retreat. It’s super simple to make. Enjoy.


3 small carrots, cut into matchsticks

2 zucchini, peeled into ribbons

2 lebanese cucumbers peeled into ribbons

¼ red cabbage, finely shredded

¼ white cabbage, finely shredded

1 cup beanspouts

1/2 cup mint leaves, torn

½ cup coriander leaves

½ red chilli, thinly sliced

1 tsp sesame seeds, toasted

2 tbsp sunflower seeds



¼ cup lime juice

1 tablespoon rice wine vinegar

2 tbsp fish sauce

1 tablespoons tamari soy

½ tsp sesame oil

1 tbsp rice malt syrup

1 tsp finely grated ginger

1 clove garlic, crushed

½ long red chilli, seeded and finely chopped
