This delicious child hood favourite treat is guilt free, full of healthy fats and naturally sweetened. Plus, coconut is packed full of antioxidants, regulates your blood sugar, is rich in iron, fibre and healthy fats, and aids skin health too! The Cacao supports a healthy gut being high in fibre, has alot of protein, potassium and magnesium aiding sleep and metabolism too! This little guy clearly packs a punch in the healthy stakes.
You can keep this in the freezer for 2 weeks and use when desired. We always use medjool dates as they are sweeter. You can find these in the fresh fruit section of your local super market. Best yet, it only takes a few minutes to make!
Makes: 10 pieces
6 medjool dates, pitted
3/4 cup coconut oil, melted
1/2 cup raw cacao
1 tsp cinnamon
1/2 tsp sea salt
3/4 cup desiccated coconut
1/2 cup shredded coconut
goji berries, to garnish
METHOD – SUPER SIMPLE – TAKES 5 MINUTES.
- In a food processor, just add the cacao, dates, melted coconut oil, cinnamon and sea salt. Pulse until smooth.
- In a bowl, combine the desiccated coconut and shredded coconut. Pour over cacao mixture and stir in.
- Lay the mixture into a baking dish. Top with a sprinkle of goji berries or get creative and use freeze dried fruit like strawberries or raspberries. Place in the freezer for 30 minutes, or until set.
- Remove from freezer and slice into pieces. Store in the freezer for 2 weeks and enjoy indulging. Great snack for kids lunch boxes too!
