Ingredients:
- 1 ripe banana
- 1 cup fresh spinach or kale
- ½ cup chopped pineapple
- ½ cup chopped mango
- ½ cup coconut water
- Toppings: sliced kiwi, shredded coconut, chia seeds, and granola
Instructions:
- In a blender, combine the banana, spinach or kale, pineapple, mango, and coconut water.
- Blend until smooth and creamy.
- Pour the smoothie into a bowl and top with sliced kiwi, shredded coconut, chia seeds, and granola.
- Enjoy this refreshing and nutrient-packed breakfast bowl to kick-start your day at the retreat.
Balinese-Inspired Gado-Gado Salad
Ingredients:
- 2 cups mixed vegetables (such as green beans, cabbage, carrots)
- ½ cup bean sprouts
- ½ cup sliced cucumber
- ½ cup cherry tomatoes, halved
- ¼ cup fried tofu or tempeh, sliced
- 2 hard-boiled eggs, sliced
- For the dressing:
- 2 tablespoons peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 teaspoon honey or maple syrup
- 1 garlic clove, minced
- 2 tablespoons warm water
Instructions:
- Steam or blanch the mixed vegetables until tender-crisp. Drain and let cool.
- In a large bowl, combine the steamed vegetables, bean sprouts, cucumber, cherry tomatoes, tofu or tempeh, and sliced hard-boiled eggs.
- In a separate bowl, whisk together the peanut butter, soy sauce, lime juice, honey or maple syrup, minced garlic, and warm water until smooth and creamy.
- Pour the dressing over the salad and toss gently to coat.

Jackfruit Rendang with Turmeric Rice
Ingredients:
For the Jackfruit Rendang:
- 2 cups young jackfruit, drained and shredded
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons red curry paste
- 1 can (400 ml) coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon coconut sugar
- 1 tablespoon lime juice
For the Turmeric Rice:
- 1 cup jasmine rice
- 1 ¾ cups water
- 1 teaspoon turmeric powder
- ¼ teaspoon salt
Instructions:
- Prepare the Jackfruit Rendang:
- In a large pan or skillet, heat a tablespoon of oil over medium heat.
- Add the diced onion, minced garlic, and grated ginger to the pan. Sauté until the onions are translucent and fragrant.
- Stir in the red curry paste and cook for another minute to release its flavours.
- Add the shredded jackfruit to the pan and mix well with the onion mixture.
- Pour in the coconut milk and soy sauce. Stir to combine all the ingredients.
- Reduce the heat to low and let the mixture simmer for about 20-25 minutes, stirring occasionally.
- Stir in the coconut sugar and lime juice. Continue simmering for an additional 5 minutes to allow the Flavors to meld together.
- Taste and adjust the seasoning, adding more soy sauce or lime juice if desired.
- Prepare the Turmeric Rice:
- Rinse the jasmine rice under cold water until the water runs clear. This helps remove excess starch.
- In a saucepan, combine the rinsed rice, water, turmeric powder, and salt.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the saucepan with a tight-fitting lid.
- Allow the rice to simmer for 15-20 minutes, or until all the liquid is absorbed and the rice is tender.
- Remove the saucepan from heat and let the rice sit, covered, for 5 minutes to steam.
- Fluff the rice with a fork before serving.
- Serve:
- Scoop a generous portion of the turmeric rice onto a plate.
- Top the rice with a serving of the jackfruit rendang.
- Garnish with fresh cilantro or basil leaves for an extra burst of flavour.
